EASY WHITE CHICKEN ENCHILADAS
Ingredients
- 2 cups grated cooked chicken can use store-bought roast chicken
- 10 flour tortillas (taco size)
- 2 cups grated Monterey Jack cheese (or mozzarella)
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 can (4 oz) diced green peppers
- salt and pepper and adobo seasoning, to taste
Instructions
- Preheat the oven to 350F degrees.
- Spray a 9 x 13 baking dish with nonstick c00king spray.
- You can cook your chicken in two ways. You can roast some chicken breasts in the 0ven. Drizzle them with a little olive oil and season with salt and pepper and cook for about 35 to 45 minutes.
- Or you can boil your chicken until it is cooked. Or you can use a store-bought roast chicken. It just depends on how much time you have to prepare it and what flavor you want from your chicken. Roasted and roasted chicken will give you the most flavor.
- Once the chicken is cooked, you'll want to shred it using two forks. Or if you have a stand mixer, using the paddle, put your chicken in the mixing bowl. Turn on the blender and within a minute your chicken will be perfectly shredded.
- Add 1 cup of grated cheese to the grated chicken with salt, pepper and adobo (if used).
- Place the chicken mixture in each of the flour tortillas.
- Roll them all up and place them in the baking dish.
- In a medium saucepan, melt the butter.
- Whisk the flour and cook and thicken for 1 minute (do not let it burn).
- Add the chicken broth and whisk until smooth.
- Stir in sour cream and green peppers. Make sure you don't let the mixture boil.
- Remove the sauce from the heat and pour it over the enchiladas.
- Garnish with the remaining grated cheese.
- Bake for about 20-25 minutes.
- If you want, you can put the grill on high and grill it for a minute or two until the cheese is lightly golden and bubbling.
