Lemon Butter Chicken

The simplest but tastiest chicken recipe! The seared chicken breasts are covered in a bright, tangy and rich lemon butter sauce that will leave you wanting more! Perfect recipe for busy weekday evenings. Serve with orzo and asparagus to complete the meal.

Ingredients

  • 4 chicken breasts (5 oz) *, pounded to a uniform thickness of 1/3 inch
  • Salt and freshly ground black pepper
  • 1/3 cup all-purpose flour
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, cut into 1 tablespoon pieces, divided
  • 1 1/2 tsp. 1 tsp minced garlic
  • 1/2 cup low sodium chicken broth
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon fresh lemon zest
  • 1 1/2 tsp. Fresh chopped parsley (optional)


Instructions

  1. Season b0th sides of the chicken with salt and pepper.
  2. Place the flour in a shallow dish and then dredge both sides of the chicken breasts in the flour, one at a time.
  3. Heat a 12 inch skillet over medium-high heat.
  4. Add the olive oil and 1 tablespoon of butter, let the butter melt, then add the chicken breasts in a single layer.
  5. Sear until golden brown on the bottom, about 4 to 5 minutes, then turn over and continue cooking until the chicken registers 165 degrees in the center, about 4 to 5 minutes more.
  6. Transfer the chicken to a plate while leaving a little excess oil in the pan.
  7. Reduce heat to medium, add garlic and sauté 20 seconds, or until lightly browned, then pour in chicken broth, scraping out the golden pieces.
  8. Pour the lemon juice then bring the mixture to a boil, reduce the heat slightly and simmer until the liquid has reduced by about half, about 2 minutes.
  9. Add the 3 tbsp. Remaining butter and lemon zest, stir to melt butter.
  10. Return the chicken to the pan, pour the sauce over the chicken and garnish with parsley. Serve hot.
