Lemon Butter Chicken
The simplest but tastiest chicken recipe! The seared chicken breasts are covered in a bright, tangy and rich lemon butter sauce that will leave you wanting more! Perfect recipe for busy weekday evenings. Serve with orzo and asparagus to complete the meal.
Ingredients
- 4 chicken breasts (5 oz) *, pounded to a uniform thickness of 1/3 inch
- Salt and freshly ground black pepper
- 1/3 cup all-purpose flour
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, cut into 1 tablespoon pieces, divided
- 1 1/2 tsp. 1 tsp minced garlic
- 1/2 cup low sodium chicken broth
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon fresh lemon zest
- 1 1/2 tsp. Fresh chopped parsley (optional)
Instructions
- Season b0th sides of the chicken with salt and pepper.
- Place the flour in a shallow dish and then dredge both sides of the chicken breasts in the flour, one at a time.
- Heat a 12 inch skillet over medium-high heat.
- Add the olive oil and 1 tablespoon of butter, let the butter melt, then add the chicken breasts in a single layer.
- Sear until golden brown on the bottom, about 4 to 5 minutes, then turn over and continue cooking until the chicken registers 165 degrees in the center, about 4 to 5 minutes more.
- Transfer the chicken to a plate while leaving a little excess oil in the pan.
- Reduce heat to medium, add garlic and sauté 20 seconds, or until lightly browned, then pour in chicken broth, scraping out the golden pieces.
- Pour the lemon juice then bring the mixture to a boil, reduce the heat slightly and simmer until the liquid has reduced by about half, about 2 minutes.
- Add the 3 tbsp. Remaining butter and lemon zest, stir to melt butter.
- Return the chicken to the pan, pour the sauce over the chicken and garnish with parsley. Serve hot.
