Creamy Bacon Chicken
Ingredients
- 6 bacon slices cut into small pieces
- 2 large chicken breasts cut in half lengthwise
- Dredging flour
- 1/4 teaspoon garlic powder
- Pepper to taste
- 1/2 cup chicken broth
- 1/2 teaspoon lemon juice
- 1 tablespoon butter
- 1 cup heavy / whipping cream
Instructions
- Cut the bacon and add it to a pan (I use kitchen scissors to do this job quickly). Fry over medium-high heat until crisp (about 10 minutes). Once the bacon is cooked, take it out of the pan and set aside. Leave the bacon fat in the pan.
- Meanwhile, prepare your chicken (cut in half lengthwise to have 4 small cutlets). Sprinkle with garlic powder and pepper, then coat with flour.
- Add the chicken to the pan and cook in the remaining bacon fat over medium-high heat for 4-5 minutes / side or until golden brown. If it starts to splash a lot, reduce the heat. Once the chicken is golden, take it out of the pan and set aside.
- Add the chicken broth, lemon juice and butter to the pan. Let it boil until it is reduced by half (about 3-4 minutes).
- Stir in the cream and once it starts to bubble, add the chicken and bacon to the pan. Cook for another 5 minutes or so until the chicken is cooked through and the sauce is to your liking.
Recipe notes
- I used my Lodge 10-1 / 4 "cast iron pan to make this recipe. Any pan would work, however!
- I suggest using boneless / skinless chicken breasts large enough for this recipe, as we cut them lengthwise in half. If you have smaller chicken breasts, use 4 and leave them intact.
