- Preheat the oven to 350˚F after step 5. Grease the cookie sheets. In a large mixing bowl with an electric mixer at medium / high speed, cream together the 2 sticks of butter, 1 cup of brown sugar and 1/2 cup of white sugar until creamy, light and fluffy.
- Add 2 eggs, one at a time, beating well with each addition, then stir in 2 tbsp. 1 tsp vanilla.
- In another bowl, mix 3 cups flour, 2 tsp. 1 tsp baking powder and 1/2 tsp. Add salt and beat in the dough by a third just until incorporated. Stir in 2 cups of chocolate chips.
- Use an ice cream scoop to get even dough balls, scraping against the side of the bowl to get a flat base. Place dough balls on a baking sheet about 2 inches apart. Mine fits on 2 cookie sheets and makes 21 cookies. Nail the top of the cookie balls with a few extra chocolate chips if desired.
- Bake one cookie sheet at a time for 12 to 15 min at 350˚F, until the edges just turn light golden brown. The tops should always look undercooked. Let the cookies cool on the baking sheet for 5 min, then transfer to a wire rack to cool.
Recipe notes
To measure the flour correctly, put it in a measuring cup for dry ingredients and level the top. Do not dip a measuring cup directly into the flour container or you can compact it and get up to 25% more flour.
