For the cake:
- 1 2/3 cup all-purpose flour 200g
- 1 teaspoon baking powder 4g
- 1/4 teaspoon baking soda 2g
- 1 teaspoon of salt 5g
- 3/4 cup butter 171g at room temperature
- 1 cup of sugar 200g
- 3 egg whites
- 2 c. 1 tsp almond extract
- 1 cup of 240mL milk
- 1/4 cup sour cream 60mL
- 1 tablespoon of vinegar 15mL
For the frosting
- 5 large egg whites
- 1 1/2 cups sugar 300g
- 1 pound butter at room temperature 454g
Instructions
For the cake:
- Preheat the oven to 350F. Butter and flour three 6-inch round molds. Whisk together the fl0ur, baking powder, baking soda and salt. Put aside.
- Combine vinegar, sour cream and milk in a small bowl and set aside.
- Cream the butter and sugar in a stand mixer using a paddle.
- Add the extract and the egg whites one by one, mixing until they are incorporated before adding the next. Scrape the bowl.
- Add the flour and the butter milk mixes in alternating batches.
- Bake at 350F for about 30 minutes or until the centers are set and elastic.
For the frosting:
- Whisk together the egg whites and sugar in a glass bowl. Place on a pan of simmering water making sure the water does not touch the bowl.
- Whip hear until a thermometer reads 165F. Transfer the mixture to a stand mixer equipped with a whisk and mix on high power for a few minutes, then sew at medium intensity until room temperature.
- Go to a paddle and add butter a tablespoon at a time. Scrape the bowl and don't forget to beat a few seconds just before transferring it to a pastry bag.
For the Assembly:
- Add the buttercream to the first layer. Place the second layer on top and repeat the process until the cake reaches three layers.
- Cover the cake with buttercream and smooth.
- Use a large star-shaped tip to place spoonfuls on it
- Add sprinkled confetti on the bottom third of the side of the cake and sprinkle on spoonfuls.
