Copycat Longhorn Parmesan Crusted Chicken
Ingredients
- 4 skinless / boneless chicken breasts pounded ¾ inch thick
- Salt / pepper to taste
- 2 tablespoons vegetable oil
Marinade:
- 1/2 cup olive oil
- 1/2 cup ranch dressing
- 3 tablespoons Worcestershire sauce
- 1 teaspoon of vinegar
- 1 teaspoon lemon juice
- 1 tablespoon minced garlic
- 1/2 teaspoon pepper
- Parmesan crust
- 3/4 cup parmesan cheese cut into pieces
- 3/4 cup Provolone cheese, cut into pieces
- 6 tablespoons Buttermilk Ranch Dressing
- 1 cup panko
- 2 teaspoons garlic powder
- 5 tablespoons of melted butter
Instructions
- Whisk all the ingredients for the marinade until well combined and of a uniform consistency.
- Place chicken in a gallon freezer bag, remove air and seal. Use a meat mallet to pound it ¾ inch thick.
- Lightly sprinkle each side of the chicken with salt and pepper if desired.
- Place the chicken in a new freezer bag with the marinade. Seal the air and refrigerate for at least 30 minutes or overnight.
- Heat 2 tablespoons of vegetable oil in a cast iron skillet over medium-high heat.
- Sear the chicken in the hot pan on each side. Avoid moving the chicken while it sizzles, it will interfere with the beautiful golden color. If the pan bec0mes too hot, reduce the heat to medium. Each side will take 3-5 minutes. Once each side is a nice golden brown and the medium is cooked, set the chicken aside.
Parmesan crust
- Preheat the oven over low heat.
- Combine chopped parmesan, provolone and buttermilk dressing in a small bowl.
- Microwave for 30 seconds.
- Use the back of a fork to mash and stir the cheese until it has the consistency of a lumpy mashed potato.
- Microwave for an additional 15 seconds. Stir and spread over the chicken.
- Mix the panko with the garlic powder. Incorporate the melted butter, this allows the Panko topping to brown, otherwise it can burn immediately. Garnish the chicken with.
- Grill for 1 to 2 minutes until the cheese is hot and melted, watch closely to make sure it doesn't burn.
- Serve with mashed potatoes and enjoy!
