Lemon Gooey Butter Cookies
Thick, fluffy and flavorful describe these delicious lemon sticky butter cookies. Made fr0m scratch, a cake mix option is included below!
INGREDIENTS
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon lemon extract
- 1 lemon, zest
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 tablespoon baking powder
- 3/4 cup caster sugar
INSTRUCTIONS
- In a large mixing bowl, beat the butter, cream cheese and granulated sugar until creamy, about 3 minutes.
- Add the eggs and lemon extract, beat until fluffy. Add the lemon zest.
- Stir in the flour, salt and baking powder until homogeneous.
- C0ver the bowl with plastic wrap and refrigerate for 30 minutes.
- Once cool, line a baking sheet with parchment paper. Preheat the oven to 350 degrees F.
- Remove the cookie dough with a 2 tbsp tablespoon. If your hands are sticky, dip them in powdered sugar first. Place the cookie dough in the powdered sugar and roll in the sugar until it is generously coated.
- Place on a baking sheet and bake for 11 to 13 minutes. Remove and cool completely on the rack.
